University of Petra Wins Green Projects Competition for Innovative Gluten-Free Bakery Project

University of Petra has won the Innovative Small Green Projects Competition in Jordan for its project, "Cultivating Samh Plants (Mesembryanthemum forsskalii) and Producing Baked Goods," led by Prof. Mayyas Al-Rimawi and Dr. Ali Al-Maqousi.
The project provides a sustainable food solution by cultivating Samh—a desert plant rich in protein, fiber, and essential minerals—to produce gluten-free bread. This offers a nutritious alternative for individuals with wheat allergies while also supporting sustainable agriculture and job creation. 
University of Petra's project was selected from among 220 competing entries and was announced as a winner during a special ceremony under the patronage of the Minister of Digital Economy and Entrepreneurship, Engineer Samir Smairat. Prof. Al-Rimawi highlighted the exceptional nutritional profile of the Samh plant, which contains 22% protein, making it a viable alternative to traditional flour. He stated, "This project enhances the quality of life for individuals with wheat allergies and expands the availability of healthy products in both the Jordanian and international markets."
Dr. Al-Maqousi emphasized the project's economic impact, noting that it promotes sustainable agriculture by utilizing natural resources in innovative ways. He added that the project strengthens food security by developing local crops that can adapt to different climatic conditions. Additionally, its implementation is expected to generate employment opportunities across various sectors, from farming to production and distribution, while stimulating the healthy and sustainable food industry.
The project team at University of Petra is conducting laboratory experiments on campus and collaborating with agricultural experts to develop smart agricultural incubators. These efforts aim to optimize the cultivation of the Samh plant and achieve the best results in flour and baked goods production. Agricultural and laboratory protocols will be tested to ensure compliance with global health and food standards.
In recent years, University of Petra has focused on applied scientific research, directing efforts toward innovative solutions that address real-world health and economic challenges. By bridging academic knowledge with practical applications, the university continues to contribute to improving quality of life and fostering economic growth.
